Sea salt with herbs is one of the simplest ways to give a dish more depth and aroma, with no extra ingredients or preparation time. Here are six concrete tips for using Mallorcan herb salt at its best.

Which sea salt should you choose?

Small jars, big flavour and simple shipping across the EU.

1. Season at the end, not the beginning

The aromas of herb salts are strongest when they are not broken down by prolonged heating. Season meat, fish and vegetables with normal salt while cooking, and add the Antoni Mateu herb salt just before serving — that makes the biggest difference.

2. On bread: the Mallorcan way

A big slice of good bread, olive oil, tomato and a pinch of herb salt: that is pa amb oli in its quickest form. The herb salt replaces herbs added separately and makes the dish even more spontaneous.

3. On grilled meat

Let the meat rest for three minutes after grilling. Then sprinkle on the herb salt and serve straight away. The residual heat opens up the aromas of the salt without burning them: an ideal fusion of meat and Mediterranean herbs.

4. On egg dishes

Fried eggs, scrambled eggs, omelettes — all benefit from a small amount of herb salt instead of normal salt. The herbs wrap the egg in a Mediterranean note that lifts it out of the everyday.

5. In salads with an olive oil dressing

Instead of adding salt, oregano and thyme separately, simply take a generous pinch of herb salt with a good splash of Arbequina EVOO and lemon juice. All in one, quick and aromatic.

6. On homemade focaccia

Just before baking, drizzle olive oil over the focaccia dough and sprinkle the herb salt generously over it. In the oven the oil and salt merge with the dough into an irresistibly aromatic surface. Once you have tried it, you will never buy ready-made focaccia again.

Which salt for which dish?

  • Natural: finishing, raw fish, desserts
  • Herb salt: grills, focaccia, eggs, salads
  • Caimari spice salt: stews, meat, hearty rice dishes
